Christmas Butter Cookies Recipe

Ingredients:
185 grams butter (room temperature)
1 cup castor sugar
1 egg
2 teaspoons vanilla essence
2 cups plain flour
1 pinch of teaspoon salt

Method:

1. Using an electric mixer, combine butter and sugar. Beat on a medium speed, (regularly scraping the sides of the bowl), until creamy.
2. Add the egg and vanilla to the mixture and continue beating until well mixed.
3. Add the flour and salt and beat at a low speed until combined.
4. Cover the cookie dough with baking paper and refrigerate for 1 hour.
5. Preheat your oven to 180°C and line two baking trays with baking paper.
6. Split dough in half (keep one half in the fridge until needed) and roll the dough onto a lightly floured surface to a ½ centimetre thickness.
7. Using festive cookie cutters, cut dough.
8. Place cookies 3 centimetres apart on the baking trays.
9. Bake for 10-12 minutes or until golden.
